Need some preparation suggestions? Here are some of our favorites:

  • Basic shiitake: Slice, then sauté in butter, ghee or sesame oil until slightly browned. Season with salt and pepper while cooking. Serve.
  • Shiitake melt: Make basic shiitake, then place in a sandwich with cheese and pan fry. Serve.
  • Oven-baked shiitake caps: Remove stems, place caps facing up on a baking sheet, and brush with a mixture of sesame oil and soy sauce. Sprinkle with freshly ground pepper. Bake at 300F for 10-15 min, watching carefully for overcooking. Remove when slightly browned around the edges. Serve.
  • Shiitake walnut burgers: Crush walnuts + 1 tsp of miso paste together in a bowl. Saute sliced shiitake with onions or shallots + garlic powder in oil for 5-7 min, then add miso-walnut mixture, saute a further 2 min, and transfer into a bowl and let cool. Stir 1 egg + panko bread crumbs into the mixture well, then place into the fridge to chill for at least 15 minutes. Form into patties, roll in bread crumbs, and fry on the stove.
